- 2 cups (500 milliliter) cooked quinoa
- 1 cup (250 milliliter) each halved cherry tomatoes and diced cucumber
- 1/2 cup (125 milliliter) baby arugula
- 1/4 cup (60 milliliter) sliced black olives
- 1/2 cup (125 milliliter) crumbled feta
- 1/4 cup (60 milliliter) light olive oil
- 1 pound (500 gram) seasoned chicken breast, sliced
- 1 package one bowl greek seasoning mix
Preparation
- 1 Combine quinoa, vegetables, olives and feta in a large bowl.
- 2 Whisk oil and seasoning in small bowl. Pour over quinoa mixture.
- 3 Toss to combine. Let sit 5-10 minutes before dividing into 4 bowls. Top with chicken slices.
