  • 1 Beat eggs lightly in medium bowl. Add cream, 1 1/2 teaspoons of the mustard and black pepper; whisk until well blended.
  • 2 Melt butter in medium oven-safe, nonstick skillet on medium heat, swirling to coat. Add egg mixture, tilting pan to spread evenly in skillet. Run spatula around edge of skillet to separate cooked egg mixture from sides. Lift slightly with spatula and tilt pan to allow uncooked mixture to flow underneath. When egg mixture is just set but top is still slightly moist, turn off heat.
  • 3 Layer ham and 1 slice of the cheese on half of the omelet; gently fold omelet in half to enclose. Place remaining cheese slice on top.
  • 4 Broil on low 30 seconds to 1 minute, just until cheese is melted and eggs are set. Drizzle with remaining 3 teaspoons mustard to serve.
