Greek Quinoa Burgers

These meatless burgers are excellent for weeknights or anytime you’re looking for a zesty taste of the Mediterranean. Switch up the bun for pita bread or naan. Or forego the bread entirely and serve with Greek salad.

INGREDIENTS

  • 1 can (540 ml) black beans drained and rinsed
  • 1 ½ cup (375 ml) cooked and cooled quinoa
  • 1 egg
  • ¼ cup (60 ml) plain bread crumbs
  • 1 pkg (24 g) one bowl greek seasoning mix
  • 2 tbsp (30 ml) oil for frying
  • 4 burger buns
  • 4 tomato slices
  • 4 tbsp (60 ml) tzatziki

Preparation

  • 1 In a large bowl, mash beans with a fork or masher until smooth. Mix in cooked quinoa, egg, breadcrumbs and seasoning.
  • 2 Form into 4 equal patties.
  • 3 Heat oil over medium heat; pan fry patties until golden brown on each side (about 6 minutes per side).
  • 4 Serve each burger on a bun with a tomato slice and 1 tbsp (30 mL) tzatziki, or your favourite toppings.
