- 5 teaspoons (25 milliliters) Paprika
- 4 teaspoons (20 milliliters) Ground Cayenne Pepper
- 1 tablespoon (15 milliliters) Garlic Powder
- 2 1/2 teaspoons (12 milliliters) Sea Salt Grinder
- 1 1/2 teaspoons (7 milliliters) Onion Powder
- 1 teaspoon (5 milliliters) Pepper Black Ground
- 4 teaspoons (20 milliliters) light brown sugar
- 2 teaspoons (10 milliliters) fresh lime zest

- Fish Salt
- 1/2 stalk lemongrass , trimmed and very finely chopped (about 1 tsp/5 ml)
- 1 teaspoon vegetable oil
Preparation
- 1 Mix all ingredients in small bowl until well blended.

Store in airtight container refrigerated up to 2 weeks. Use to season wings, chicken or pork, or in recipes for Vietnamese Cajun Beurre Blanc Shrimp, Fried Chicken Sandwich or Salad Crunch. (Makes about 10 Tbsp/150 ml)
Test Kitchen Tip: Fish salt is an umami-forward salt, infused with anchovies to add rich savoury flavor. Use fish salt in place of fish sauce in applications where adding additional liquid would compromise the recipe. Either fish sauce or salt works well in this recipe.
