Coconut Eggnog (Coquito)

Coquito is a coconut eggnog traditionally served in Puerto Rico during Christmas and New Year’s Day celebrations with family and friends. In this version, we’ve omitted the raw eggs. It is served cold in shot glasses or small cups sprinkled with ground cinnamon or nutmeg.

INGREDIENTS

  • 1 can (400 ml) cream of coconut or coconut milk
  • 1 can (354 ml) evaporated milk
  • 1/2 cup (125 ml) plus 2 tablespoons (30 mL) sweetened condensed milk
  • 1/2 cup (125 ml) white rum
  • 2 tsps (10 ml) Pure Vanilla Extract
  • 1/4 tsp (1 ml) Ground Cinnamon
  • 1/8 tsp (1/2 ml) Nutmeg Ground

Preparation

  • 1 Place all ingredients in blender container; cover. Blend on high speed until smooth.
  • 2 Refrigerate until chilled. Serve in small glasses sprinkled with additional ground cinnamon.
