  • 2 cup (500 mililiters) water
  • 1 package (340 grams) plain couscous
  • 1/2 cup (125 mililiters) coarsely chopped dried tart cherries
  • 1/4 cup (60 mililiters) coarsely chopped dried apricots
  • 2 plum tomatoes , coarsely chopped
  • 1/2 cup (125 mililiters) finely chopped fresh parsley
  • 1/4 cup (60 mililiters) thinly sliced green onions
  • 1/4 cup (60 mililiters) lemon juice
  • 1/4 cup (60 mililiters) olive oil
  • 1 tablespoon (15 mililiters) honey
  • 2 teaspoon (10 mililiters) Cumin, Ground
  • 1 teaspoon (5 mililiters) salt
  • 1/4 teaspoon (1 mililiters) Organic Ground Coriander
  • 1/4 teaspoon (1 mililiters) Ground Black Pepper
  • 1/4 cup (60 mililiters) finely chopped pistachios

Preparation

  • 1 Bring water to boil in medium saucepan on high heat. Stir in couscous, cherries and apricots. Remove from heat; cover. Let stand 5 minutes or until liquid has been absorbed. Fluff with a fork. Spoon into large bowl. Cool about 10 minutes, tossing occasionally with a fork. Add tomatoes, parsley and green onions; toss to mix well.
  • 2 Stir lemon juice, oil, honey, cumin, salt, coriander and pepper in small bowl with wire whisk until well blended. Add dressing to couscous mixture; toss to coat well.
  • 3 Sprinkle with pistachios before serving.
