  • 6 hard cooked large eggs, coarsely chopped
  • 2 tablespoon (30 milliliter) Garlic Powder
  • 2 teaspoons (10 milliliter) finely chopped chives
  • 1/4 cup (50 milliliter) diced roasted peppers
  • 1 teaspoon (5 milliliter) balsamic vinegar
  • 1/2 cup (125 milliliter) mayonnaise
  • 8 lettuce leaves
  • 4 medium croissants, sliced

Preparation

  • 1 Combine eggs, seasoning, chives, roasted peppers, vinegar and mayonnaise.
  • 2 Let stand 20 minutes
  • 3 Open croissant and place two lettuce leaves inside. Divide egg mixture equally among croissants. Close and serve immediately.
