- 6 hard cooked large eggs, coarsely chopped
- 2 tablespoon (30 milliliter) Garlic Powder
- 2 teaspoons (10 milliliter) finely chopped chives
- 1/4 cup (50 milliliter) diced roasted peppers
- 1 teaspoon (5 milliliter) balsamic vinegar
- 1/2 cup (125 milliliter) mayonnaise
- 8 lettuce leaves
- 4 medium croissants, sliced
Preparation
- 1 Combine eggs, seasoning, chives, roasted peppers, vinegar and mayonnaise.
- 2 Let stand 20 minutes
- 3 Open croissant and place two lettuce leaves inside. Divide egg mixture equally among croissants. Close and serve immediately.
