  • 2 tablespoons (30 mililiters) oil
  • 1 1/2 pounds (750 grams) chicken tenders Substitution Available
    • boneless skinless chicken breast, cut into strips
  • 1 medium onion , chopped
  • 1 can (14 1/2 ounces/398 ml) diced tomatoes , undrained
  • 1/4 cup (60 mililiters) water
  • 1 teaspoon (5 mililiters) Basil Leaves
  • 1/2 teaspoon (2 mililiters) Ground Black Pepper
  • 1/2 teaspoon (2 mililiters) Garlic Powder
  • 1/2 teaspoon (2 mililiters) Oregano Leaves
  • 1/2 teaspoon (2 mililiters) salt
  • 1 package (142 grams) baby spinach

Preparation

  • 1 Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 10 minutes or until browned. Add onion; cook and stir 5 minutes or until softened.
  • 2 Stir in tomatoes, water and seasonings. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 3 minutes or until heated through.
  • 3 Stir in spinach; cook 2 minutes or until spinach begins to wilt.
