INGREDIENTS 12 (1/4 cup) SERVINGS

  • 2 pounds (1 kilogram) plum tomatoes , cored and chopped
  • 1 teaspoon (5 milliliters) salt
  • 1/2 small red onion , finely chopped
  • 1/4 cup (60 milliliters) finely chopped fresh cilantro leaves and stems
  • 1 tablespoon (15 milliliters) fresh lime juice
  • 2 teaspoons (10 milliliters) Garlic Powder
  • 1/2 teaspoon (2 milliliters) Pepper Black Ground

Preparation

  • 1 Place tomatoes in mesh strainer over medium bowl. Sprinkle with salt, tossing gently to mix. Let stand 30 minutes. Meanwhile, mix remaining ingredients in large bowl. Set aside.
  • 2 Place 1 1/2 cups (375 ml) of the tomatoes in food processor. Pulse just until smooth. Add pureed tomatoes to bowl with remaining ingredients. Add remaining tomatoes, stirring to mix well.
  • 3 Serve immediately or store in airtight container in refrigerator up to 1 week.

    Test Kitchen Tip: For a sweet or spicy twist, stir in 1 cup (250 ml) chopped fresh mango, peach or pineapple, or 1/4 cup (60 ml) chopped fresh jalapeño.
