INGREDIENTS 12 (1/4 cup) SERVINGS
- 2 pounds (1 kilogram) plum tomatoes , cored and chopped
- 1 teaspoon (5 milliliters) salt
- 1/2 small red onion , finely chopped
- 1/4 cup (60 milliliters) finely chopped fresh cilantro leaves and stems
- 1 tablespoon (15 milliliters) fresh lime juice
- 2 teaspoons (10 milliliters) Garlic Powder
- 1/2 teaspoon (2 milliliters) Pepper Black Ground
Preparation
- 1 Place tomatoes in mesh strainer over medium bowl. Sprinkle with salt, tossing gently to mix. Let stand 30 minutes. Meanwhile, mix remaining ingredients in large bowl. Set aside.
- 2 Place 1 1/2 cups (375 ml) of the tomatoes in food processor. Pulse just until smooth. Add pureed tomatoes to bowl with remaining ingredients. Add remaining tomatoes, stirring to mix well.

Serve immediately or store in airtight container in refrigerator up to 1 week.
Test Kitchen Tip: For a sweet or spicy twist, stir in 1 cup (250 ml) chopped fresh mango, peach or pineapple, or 1/4 cup (60 ml) chopped fresh jalapeño.
