- 1/3 cup (75 milliliters) butter
- 1/3 cup (75 milliliters) packed brown sugar
- 6 small apples (about 1 ½ lb/750 g) , peeled and cubed
- 2/3 cup (150 milliliters) whipping cream (35%)
- 1/2 teaspoon (2 milliliters) Organic Ground Cinnamon
- Buttermilk Waffles
- 2 eggs
- 1 1/4 cups (310 milliliters) buttermilk
- 3 tablespoons (45 milliliters) melted butter
- 1 teaspoon (5 milliliters) Pure Vanilla Extract
- 1 1/4 cup (310 milliliters) all-purpose flour
- 2 tablespoons (30 milliliters) granulated sugar
- 1 tablespoon (15 milliliters) baking powder
- 1/4 teaspoon (1 milliliter) salt
Preparation
- 1 To make the Caramelized Apples, in a large skillet, melt butter over medium heat; stir in sugar. Add apples; cook, stirring occasionally, until tender, about 10 minutes. Add cream and cinnamon; simmer, stirring, until sauce thickens slightly, about 3 minutes. Keep warm.
- 2 To make the Buttermilk Waffles, in a large bowl, whisk eggs, buttermilk, butter and vanilla. In separate bowl, whisk flour, sugar, baking powder and salt; stir into egg mixture just until combined. Let stand for 5 minutes.
- 3 Heat waffle iron; grease well. Using about ½ cup (125 mL) batter per waffle, pour onto waffle iron. Close lid and cook until golden and crisp, 4 to 6 minutes. Repeat with remaining batter, greasing pan between each waffle.
