  • Vegetable oil , for frying
  • 2 eggs
  • 1/4 cup (60 milliliters) water
  • 1 cup (250 milliliters) Fish Fry Seasoned Fry Mix
  • 4 green tomatoes , cut into 1/3-inch (1 cm) thick slices
  • Salt

Preparation

  • 1 Pour oil into deep heavy skillet, filling no more than 1/3 full. Heat on medium-high heat to 350°F (180 °C).
  • 2 Beat eggs and water in shallow bowl. Place Fish Fry in shallow dish. Dip tomato slices in egg mixture. Coat in Fish Fry, pressing lightly; shake off excess.
  • 3 Fry tomato slices in batches, 2 to 3 minutes or until golden brown. Drain on paper towels. Season with salt, if desired.
