INGREDIENTS 16 (1-Tablespoon/15-ml) SERVINGS

  • 1/4 cup (60 milliliters) capers , rinsed and dried
  • 4 teaspoons (20 milliliters) French’s Dijon Mustard
  • 1 tablespoon (15 milliliters) fresh lemon zest
  • 1 cup (225 grams) unsalted butter , softened

Preparation

  • 1 Place capers on paper towel-lined plate. Cover with another layer of paper towels. Microwave 5 to 8 minutes on 50% power, tossing to mix every minute, until completely dry and lightly browned. Cool completely.
  • 2 Place capers in clean spice grinder or coffee grinder. Pulse until mixture resembles coarse crumbs. Mix capers and remaining ingredients in small bowl until well blende
  • 3 Spoon butter onto plastic wrap. Roll into a log about 1-inch (2.5-cm) in diameter. Wrap tightly and refrigerate until firm. Refrigerate up to 1 week or freeze up to 1 month. Serve with toasted baguette, use to season grilled salmon or steamed veggies.
