The chicken for this dish can also be grilled on the BBQ after seasoning. The mango relish brings a fresh citrus taste to the spicy Cajun flavour.

  • 1 pound (500 g) boneless, skinless chicken breasts
  • 3 tbsp (45 ml) Cajun
  • 1/2 cup (125 ml) finely diced mango
  • 1/4 cup (60 ml) finely diced red onion
  • 1/4 cup (60 mg) finely diced green or red sweet pepper
  • 1 tsp (5 ml) chopped fresh cilantro
  • 1/4 tsp (1 ml) Organic Ground Black Pepper
  • Juice of half a lime (about 1 tbsp/15 mL)

Preparation

  • 1 Preheat oven to 400°F (200°C). Rub chicken with seasoning blend.
  • 2 In ungreased oven-proof skillet over medium-high heat, brown chicken all over, about 2 minutes per side. Transfer skillet to oven; bake until no longer pink inside and internal temperature reaches 165°F (74°C), 6 to 8 minutes.
  • 3 Meanwhile, in bowl, combine mango, red onion, sweet pepper, lime juice, cilantro and black pepper.
  • 4 Slice chicken and serve with mango relish.
  • 5 Test Kitchen Tip: This chicken can be grilled instead. To do so, place seasoned chicken breasts on a preheated greased grill over medium-high heat; close lid and grill, turning once, until no longer pink inside, 8 to 10 minutes.
