  • 2 tablespoon (30 mililiter) vegetable oil
  • 1/2 cup (125 mililiter) each sliced mushrooms and red onion
  • 1/2 cup (125 mililiter) each diced tomato and green bell pepper
  • 2 tablespoon (30 mililiter) Italiano
  • 8 large eggs, beaten

Preparation

  • 1 In medium oven proof skillet over medium-high heat, add oil and vegetables. Sauté 2 minutes.
  • 2 Stir in seasoning and eggs.
  • 3 Bake at 375°F (190°C) for 20 minutes or until eggs are fully cooked, internal temperature reaches 165°F (74°C).
  • 4 Cut into 6 portions and serve.
