Alum is used to maintain crispness in pickling recipes.

Usage Tips

Dissolve alum in water using amounts specified in your recipe. Use no more than 1/4 tsp (1 mL) per 1 qt (1 L) water. Rinse vegetables thoroughly. Do not add alum directly to the final pickling brine.
