Weeknight-Ready Recipes to Get You Through the Week

Weeknight-Ready Recipes to Get You Through the Week

Weeknight meal fatigue is real. We’ve got the cure.

It can be seriously challenging to get good food on the table fast. Especially Monday through Thursday, when you’re shuttling the littles to soccer, catching up on laundry and packing lunches for tomorrow, all on top of that thing you have called a job. Enter these weeknight-saving recipes.

From pizza and lettuce wraps to power bowls and tortilla soup, there’s something to please everybody at the table. Yup, even the kids. Ditch the weeknight dinner stress and say hello to meals made flavourful and easy. Don’t worry, we’ve got your back.

Comforting Favorites

Easy Chili Pizza: What’s not to love about this kid-friendly meal? Organic Chili Seasoning Mix, jarred red sauce and prepared pizza crust get you to the finish line fast. Oh, and it’s chili AND pizza.

Tip: Prepare a double batch of chili on Monday and use the leftovers to top this pie. Genius.

Turkey & Waffles with Gravy: For a laid-back weeknight dinner, try this new take on the American classic, chicken and waffles. We’ve swapped turkey breast – even better if it’s leftover – and sandwiched it between frozen waffles. Smother it all in a rich homemade gravy made with Organic Gravy Mix for Turkey and call it a day.

Southwest Tortilla Soup: Everything you could want in a tortilla soup, ready in less than an hour. Smoky chipotle and Minced Garlic short-cut you to Mexican-inspired flavour. Toppers like shredded cheese, corn chips, avocado and green onions let everyone at the table make it their own.

Veggie-Forward

Sriracha Lime Shrimp Lettuce Wraps: Crisp lettuce leaves are the perfect wrap for grilled shrimp and cilantro-flecked rice. Top with fresh veggies for a welcome crunch and finish with a drizzle of Sriracha and Lime Mayo for heat. Assemble. Eat. Enjoy. Repeat!

Power bowls: Load up on earthy grains, colorful veggies, vibrant greens and irresistible dressings … the combinations are endless when it comes to homemade power bowls. Make enough for leftovers, and tomorrow’s lunch will be ready before you’ve even sat down for tonight’s dinner. We’re currently loving the Moroccan Power Bowl, Argentine Power Bowl, & Greek Power Bowl.

A Sweet Finish

Mini Apple Pie Spiced Monkey Breads: Shortcut your way to dessert with prepared, refrigerated biscuit dough. Just pop open the tube and bake with brown sugar, butter and Apple Pie Spice. Enjoy mini-sized sweet, fragrant (and a little sticky!) breads any day of the week.
