- 5 cups (1.25 liters) prepared mashed potatoes
- 1 egg
- 1 1/2 cups (375 milliliters) shredded Monterey Jack cheese , divided
- 3/4 cup (175 milliliters) all-purpose flour
- 1 cup (250 milliliters) French's® Jalapeño Crunchy Toppers , divided
- 4 green onions , finely chopped
Preparation
- 1 Preheat oven to 400°F (200°C). Mix mashed potatoes, egg, 1 cup (250 mL) of the cheese, flour, half of the Crispy Jalapeños and green onions in large bowl.
- 2 Spray mini muffin pans with no stick cooking spray. Fill cups with potato mixture. Top each cup with remaining cheese and Crispy Jalapeños.
- 3 Bake 15 to 20 minutes or until set and tops are golden brown. Let stand in pan 2 minutes before serving.
