Preparation
- 1 Preheat oven to 450°F (230°C). Grease a shallow oven-safe dish with butter.
- 2 Cut peaches in half, and scoop out a little flesh.
- 3 Crumble cake and mix with almonds. Add the orange juice to the cake mixture.
- 4 Fill peaches with mixture and place in prepared dish.
- 5 Combine honey with wine or sherry and pour over peaches.
- 6 In a bowl, combine butter, rice flour, oats and brown sugar, and mix until a crumbly consistency. Divide crumble evenly between peaches.
- 7 Bake for 15-20 minutes or until peaches are tender and crumble is golden brown.
- 8 Serve hot with ice cream, if desired.
