Stuffed Honey Peaches are a must for my family Easter get-togethers, an Easter tradition. They’re especially a treat for the grown-ups as the kids devour chocolate.

Preparation

  • 1 Preheat oven to 450°F (230°C). Grease a shallow oven-safe dish with butter.
  • 2 Cut peaches in half, and scoop out a little flesh.
  • 3 Crumble cake and mix with almonds. Add the orange juice to the cake mixture.
  • 4 Fill peaches with mixture and place in prepared dish.
  • 5 Combine honey with wine or sherry and pour over peaches.
  • 6 In a bowl, combine butter, rice flour, oats and brown sugar, and mix until a crumbly consistency. Divide crumble evenly between peaches.
  • 7 Bake for 15-20 minutes or until peaches are tender and crumble is golden brown.
  • 8 Serve hot with ice cream, if desired.
